Tostitos Pico de Gallo Bites

Ingredients
- 2 roma tomatoes, seeded and diced
- 1 small red onion, diced
- 1 Tbsp cilantro, chopped
- 1 green pepper, diced
- 1 jalapeno, diced
- 3 Tbsp grapeseed oil
- 2 limes, juiced
- salt & pepper to taste
- 1/4 cup grapeseed oil
- 1/4 cup Mayonnaise
- 1 lemon, juiced
- 2 garlic cloves, minced
- salt to taste
- Half bag Bite Size Rounds TOSTITOS® Mexican Style Three Cheese
- Microgreens as garnish
Directions
- In a medium bowl mix together tomato, red onion, cilantro, green pepper, jalapeno, lime juice, and grapeseed oil. Season with salt and pepper and set aside.
- In a small bowl, whisk together mayonnaise, lemon juice, garlic, salt, and pepper. Slowly drizze in the grapeseed oil to emulsify. Sea aside.
- Place TOSTITOS(r) Mexican Style Three Cheese Bite Size Rounds on a large plate.
- Put the pico de gallo on top of each one, add a small dollop of garlic aioli and garnish with microgreens.
