Recipe Yields 2
Ingredients:
- 2 Green Plantains
- Salt
- Water
- Onions
- 1 Red Onion Sliced
- 1 Ounce Olive oil
- 2 Ounces of Vinegar
Directions:
- Peel Plantains, Boil in salted water until tender
- Once tender remove plantains from water and mash until smooth with few to no lumps, mix in butter and some left over water from cooking.
- Peel and chop onions
- In small pan add olive oil
- Cook onions until tender low medium heat
- Add vinegar, cook until vinegar is absorbed
- Fry Salami, Cheese and Egg
