Festive Cocktail Meatballs with Minute Rice

Ingredients:

  • 1lb lean ground beef
  • 1/2 cup Minute® Basmati Rice Cups
  • 1 can (8 oz.) crushed pineapple in juice, drained
  • 1/4 cup carrot, finely grated
  • 1/4 cup onion, chopped
  • 1 egg, lightly beaten
  • 1 tsp ground ginger
  • 1/2 tbsp salt
  • 1 bottle (8 oz.) prepared French dressing
  • 2 tbsp soy sauce

Directions:

  1. Heat rice according to package. Preheat oven to 400° F. 
  2. Mix beef, rice, pineapple, carrots, onions, egg and ginger in medium bowl. Shape into 1-inch meatballs. Place on greased baking sheets. Bake 15 minutes or until browned. 
  3. Mix together French dressing and soy sauce. Serve meatballs with dressing mixture.
