Festive Cocktail Meatballs with Minute Rice

Ingredients:
- 1lb lean ground beef
- 1/2 cup Minute® Basmati Rice Cups
- 1 can (8 oz.) crushed pineapple in juice, drained
- 1/4 cup carrot, finely grated
- 1/4 cup onion, chopped
- 1 egg, lightly beaten
- 1 tsp ground ginger
- 1/2 tbsp salt
- 1 bottle (8 oz.) prepared French dressing
- 2 tbsp soy sauce
Directions:
- Heat rice according to package. Preheat oven to 400° F.
- Mix beef, rice, pineapple, carrots, onions, egg and ginger in medium bowl. Shape into 1-inch meatballs. Place on greased baking sheets. Bake 15 minutes or until browned.
- Mix together French dressing and soy sauce. Serve meatballs with dressing mixture.
