Dominican Potato Salad

Ingredients:

  • 1 bag of Green Giant Fresh One Step…Done potatoes

  • 2 large carrots

  • 3 eggs

  • Salt, to taste

  • 1 apple, diced

  • 1 red onion

  • 2 tablespoons vinegar

  • ½ cup sweet corn

  • ½ cup green peas

  • ½ cup mayonnaise 

Directions:

  1. Boil carrots and eggs in a pot of salted water for 12 minutes, then remove the eggs and continue boiling the carrots until fully cooked. Set carrots aside to cool.

  2. While those ingredients are boiling, cook potatoes according to package instructions, then transfer to a bowl to cool.

  3. Once cooled, dice the potatoes, carrots, eggs and apples into small cubes.

  4. Mince the red onion to tiny pieces and add vinegar to set aside for a quick pickle (about 10 minutes).

  5. Mix potatoes, carrots, eggs, apples, onions, corn and peas in bowl with mayonnaise and salt to taste

  6. Chill in the refrigerator for an hour or until ready to serve.
