Chicken and Brown Rice Lunchbox Cups

Ingredients:

  • 1 cup Carolina® Brown Rice
  • 1 cup shredded Cheddar cheese, divided
  • 1 cup cooked chicken, shredded
  • 6 slices cooked bacon, chopped
  • 3 eggs, lightly beaten
  • 2 green onions, chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Directions:

  1. Prepare rice according to package instructions.
  2. Preheat oven to 375°F. Grease 12-cup muffin pan.
  3. In large bowl, combine rice, 3/4 cup cheese, chicken, bacon, eggs, green onions, salt and pepper. Divide mixture evenly among muffin cups; sprinkle with remaining cheese.
  4. Bake for 20 to 25 minutes until firm to the touch and tops are beginning to brown.
