Ingredients:
- 3-4 cups of leftover rice
- 1 block of firm tofu
- 1 small can of peas and carrots (or other cubed veg)
- 1 small head of broccoli, chopped
- ½ onion, diced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons chili sauce like sriracha
- 1 tablespoon rice wine vinegar (but can use any vinegar on hand)
- 1 teaspoon pepper
- 2 teaspoons garlic powder
- 1 teaspoon turmeric
Directions:
Cook onions and garlic in a pan with olive oil till starting to brown then crumble in tofu. Cook over medium heat for about 5 minutes then add vegetables. Once they are cooked through, add leftover rice and seasonings and keep stirring on stovetop till everything is well-incorporated and heated up. Enjoy!
